Thank you everyone for your responses. I appreciate the information. I feel a lot more comfortable with my planning now. I think with 3,750 sq ft of pasture, plus 144 ft of inside space, three ewes and a ram will be very comfortable.

I've decided on Berkshire pigs. Every breed I've chosen (Australorp chickens, Red Poll cattle, Berkshire pigs and Texel sheep) are known for being easy and docile. Coincidentally, they all have high marks for tastiness. :drool

I know SheepGirl has a Texel ram (he is too cute!), does anyone else have experience wirh Texels? From what I've read I'm surprised I can't find a thread on them. If anyone knows approximate weight of a nine months lamb and how much meat yield I can expect, I would appreciate that info, too...
The reason I was thinking about 1 in Spring and 1 in Fall is to have fresh lamb year round but I suppose that came be accomplished in a freezer. After everything I've read I definitely want Texel sheep, I just have to find a farm or two in Arkansas. :fl
