Knob fiddling is the worst(and easiest) habit for using an incubator.
Change the temp knob....then wait at least 2 hours for it to stabilize.
Hovering and checking is ok, necessary even, but no touchie!! haha!
They can be complicated and a lot can go wrong.
Ya just gotta keep an eye on it, know when to act and when to wait.
Much more nerve wracking than a broody hen...tho I've only had one broody and I isolated her to reduce the possible drama.

Color and size of comb and wattles on males should be glaringly apparent in those breeds by 6 weeks.

Some birds are more inclined to being 'friendly' and comfortable around humans or other animals.
It's more about the individual bird than the breed, but most my EE's are pretty skittish and some have been aggressive.
Have you checked them over real well for mites and/or lice?
Best done well after dark with a strong flashlight/headlight, easier to 'catch' bird and also to check for the mites that live in structure and only come out at night to feed off roosting birds.

Could start turning the heater temp down too......I turn the temp down, and/or raise the heater up a bit, until they start to complain then turn...
