I guess it's best to have pelts from a mature species, be it beaver, fox, deer, mink, etc. A good rabbit hide probably comes from a year old or older. Mine are between 10 and 12 weeks when prime for meat, so the hides just get thrown away.

I use the backstraps for breaded nuggets. Cut into chunks, hammer tender, and bread & fry. Also other portions deboned and hammered work good for breaded cutlets. I have a good chicken casserole that is easy, can use cooked rabbit, and kids love it. It is good in noodles, and on the grill.

Yes and no. I try to breed in Spring and breed again in early Fall. If it's too hot or too cold I avoid breeding. So, they do kindle sometimes in summer or winter.
