From my personal experience, the smaller the breed the better they tolerate the heat. However, you do not want small rabbits if you are raising for meat.

Becareful with the carpet. If they eat it they may have a hard time digesting the fibers and it could cause a blockage. My daughter likes to gever her bunnies "play time" in an outdoor cage. They get to dig at the ground and nibble ont he grass.
I would paint. The rabbit spray will absorb into the walls. I spray my walls with vinegar but wish I had painted it. I did paint the floor with a good quality floor paint. This keeps melting snow from destroying the floor and I can hose out the shed if need be.
Buy them toys! Baby chew toys (the keys work well). My bunnies like to pick these up and throw them. Wooded spools to chew on are good as well. You can also take your empty toilet paper tube and stuff it full of hay. This offers them a toy, something to chew on, and a treat, all in one!
My single main laion heads molt like normal rabbits, but my double main lion heads tend to pull out their wool when they molt. The bonus to this is that their wool grows back twics as thick and puffy. Our Senior doe is gorgeous a month or so after she is done molting.
