Beef & Barley Stew

Beef & Barley Stew

Ingredients:
3 Cans Mixed Vegetables
1 Jar Spaghetti Sauce (Traditionally flavored)
1/2 Pound Pearl Barley
1 Pound Ground Beef
1 Tablespoon Olive Oil (Extra Virgin)
1 Tablespoon Superfinely Minced Garlic
1 Tablespoon Tomato Paste
1 Teaspoon Anchovy Paste
2 Tablespoons Finely chopped Fresh Italian Herbs (Parsley, Basil, Thyme, Oregano)
Salt and Pepper to taste

Equipment:
Crockpot or Stewpot
2 Quart Saucepan
Skillet

Directions:
Pour Barley into Saucepan and fill about 3/4 full of water. Put over med high heat and bring to a boil. Reduce heat to med and simmer for 15 minutes. Barley will still be chewy at this point.
At the same time drain the vegetables and pour into the crockpot along with the spaghetti sauce. Fill the spaghetti sauce jar with water and dump into the crockpot. Cover and turn on low.
At the same time add olive oil to the skillet and warm gently. Add anchovy paste and heat until the paste melts into the oil. Add the ground beef and garlic. Brown ground beef then add the tomato paste.
Add the ground beef to the crockpot (do not drain the ground beef).
When the barley has boiled for 15 minutes, remove from the heat and scoop out 2 cups of the cooking water and add to the crockpot.
Drain the barley. Then add it to the crockpot.
Cover and raise the heat of the crockpot to high.
Dinner will be ready in 3-4 hours. It is ready when the barley has absorbed 3/4 of the liquid and is very tender.

This is melt in your mouth. Delicious.

Note, if using a stewpot instead of a crockpot then the final cook time will probably only be 45 minutes over medium heat. I use a crockpot.

Haha! That is funny! I keep telling you that we are twins :)

I'll use some of yours and Queen Mum's tips from the other thread and try to get some better pics up (I've still got leftovers). I did have a smudge on my lens it turns out :hide
