I was wondering if anyone had a variety of cheese recipes? I can find ghouda(not sure if its spelled properly) and one or two other simple cheeses. There are supposed to be hundreds of types of goat cheeses, but I can only find a few. How would I go about making others, such as a chedder, american, swiss... types? Can I use a recipe for cow milk and just substitute goat milk in for the cows? Could I take some cheese from the store and incorperate it into the recipe like you would with yogurt? I should have lots of goats milk before the end of the month, so I would like to get as many recipes as I can to figure out what I like when the time comes. Thanks.

There are several good books on making cheese with the recipes. One of them I have is "Complete Idiots Guide to Cheese Making" by James R Leverentz. There are several others out there as well. I got mine on Amazon, but you might check on some of the cheese sites like Leeners, as well as Fiasco Farms, which is online.

You can make any kind of cheese with goats milk. Swiss, gouda, cheddar, blue. goats milk has a few differences but in general it is great for making cheese. You may need to add calcium chloride though.
