Chicken Salad?

I have never made chicken salad before. I cooked chicken that had been in my freezer for 3 years, in the slow cooker, and it tastes fine. I want to make chicken salad, but the recipes I'm finding online
  • Require mayo
  • Require dairy
  • Have unusual ingredients like lime
I can't eat mayo or dairy, and never use olive oil so mine went rancid. I don't "do" hot/spicy, am sensitive to tomatoes. Yep, I know, I'm difficult.

Any suggestions?

Well, ya' got me thinking on that one and figured you could probably substitute your favorite salad dressing for the mayo. Then I did a quick search and found this on Taste of Home - (though it's got yogurt but you could substitute something else I would guess)...

Well, I'd suggest yogurt but, they're mostly dairy. So try vegan mayo, Hellman's has one & prob others brands. They're plant based & oils. Any plant/nut milk & an oil, whipped to emulsify. MOST such salads are mayo based & yes, your limitations make for a challenge 😁

So Delicious & Silk make non dairy yogurts.

Those would be my first considerations.

Good one! I don't use it but for ONE dip, made every few years! Of course, I assumed it was just sweeter mayo :lol:

Miracle Whip's ingredients include water, soybean oil, high-fructose corn syrup, vinegar, modified cornstarch, eggs, salt, natural flavor, mustard flour, potassium sorbate, spice, and dried garlic. Some variations also include paprika.

I tried substituting softened butter, which worked fine for binding it together, and added some pickle relish, salt, pepper, but it was meh. Added some crumbled feta. Better, but still bland.

Can't do Miracle Whip, though I appreciated the idea. I can't eat any corn. 🙄

Well you sure can't eat out much, right? Grocery shopping takes on a new meaning.

One of the reasons I have chickens is I can eat their eggs. Store-bought or restaurant eggs make me sick, probably the antibiotics they feed them.

I feel safe eating Amish baked goods, other food.
