Cooked a goat leg roast-excellent!!

I put the 4-lb roast in a plastic tub last night, 1 gallon size, with a l/2 cup of salt and water. I brined it all night.

This morning I browned it in l/2 butter, l/2 olive oil on all sides, layered the bottom of a heavy roaster with onions, sprinkled it with dry onion soup and cooked it on 225 degrees for 8 hours.

I took the meat out, added a can of low sodium beef broth, and made gravy.

I shredded the meat, put it in the gravy.

Served meat, gravy over mashed potatoes.

It was delicious.

Meat is from a 9month old Nubian wether, wethered at 2 months of age. 90-100 lbs.

I would say you could serve four to six people. I always make lots of mashed potatoes and have applesauce.

You could have vegies, salad, etc.

My husband loves meat and taters and bread. Period. He won't eat lettuce salad, will eat green peas if they have cheese on them. LOL.

Thanks goodness he likes fruit.
