Both of my Nubians gives cream that when refrigerated, sets up solid so I have to dig it out of the jar. It's great when I make butter as I have my butter in under 3 minutes; the record is 5 seconds on one batch. Unfortunately I can't use it for whipped cream or ice cream as it goes to butter as soon as I start mixing it etc.
I'm feeding All Stock/Calf Manna and supplementing with small amount of BOSS. They are on hay and pasture and have loose mineral free choice. I've had them for 1 year and am feeding the same as the previous owner. Talked to the Ag Dept at WSU yesterday but no one there had any ideas other than talking to people who use their milk for various products. Odd thing is, I could see them both having the same issue if they were related but they aren't. Other than the cream issue, their milk/cream is the best I've ever had.
Has anyone ever had or heard of this problem with cream?

Have you tried letting your cream come to room temperature before making whipped cream out of it?

We have had similar problems with jersey milk, and found that leaving the cream out overnight helps alot.
I tried your idea and it works. I now have ice cream without butter in it and as soon as I have a need for whipped cream, will try that as well.
Thanks for your help.
