Do they cut into desired portions, also? Wrap, etc?
Yup! Cut to order. We had him do our last lamb and everything was excellent. This time around it will be chops, steaks, leg roasts split and ground not stew. He marked each on with cuts on the foreleg slits - 1, 2 and 3 so each will be cut, wrapped and frozen for everyone per what they wanted in the cuts.

Anyone else supposed to be in the middle of lambing come Easter?
Honestly this year, there won't be a ton of different stuff. I'll try to make it to the lovely church brunch and service. But Lambing could start as early as today and if we were lucky, we might have some Easter lambs. Calving could start Saturday, definite possibility of Easter calfs, and we've been trying to hatch all spring. Easter chicks would be fun, but I think the focus is moving towards the calving and lambing. But a lovely time of year to celebrate everything there is to celebrate and to spend time with family.
