What are your favorite types?

I drink tea a lot more than coffee but I enjoy different varieties of chai. I also like Celestial Seasonings "lemon Zinger" and "Berry Zinger."

I also like Good Earth's "Sweet and Spicy" but I can't find it anywhere in Michigan now.

I like Celestial Seasonings Chamomile, it doesn't leave an aftertaste in my mouth, and doesn't have caffine so I can drink it all day.

If I drink coffee or regular tea after noon I am up all night.

I like homemade chai so much, that the good brands of storebought taste funny to me now, kinda flat...Yogi, Stash, etc. I make it with whole or slightly crushed spices and make enough to last a few days, keeping it in the fridge and heating it up as needed.

I change the way I make it depending on my mood, but this is the basic idea. Adjust to taste by increasing spices you like and decreasing ones you don't.

Two quarts water
A four inch piece of cinnamon bark
Half a nutmeg (I break them with plyers)
A few whole allspice seeds, maybe a dozen
Chopped fresh ginger root, about the size of three of your fingers (I just scrub it, don't peel it, and run it through the food processer. It can also be minced with a sharp knife or grated with a sharp grater. I do up a couple pounds and divide into one batch portions and freeze)

Optional (the following make a more traditional chai, but you can make a perfectly good tea without them):
cardamom pods
black peppercorns
whole cloves

Simmer, covered, for half hour. Remove from heat and allow to stand at room temp for several hours or overnight.....relax, it is sterile, you just boiled it for a half hour!

Strain into glass bottles. Use this concentrate to make tea. I use 1/4 chai to 3/4 water and use this to make black tea. It is great iced, or you can use milk for a more traditional chai. I also use it with stevia to flavor kombucha tea.

Another optional item could be a vanilla bean pod :)

I recently made a couple of videos for those who don't normally cook much, but wanted to make my tea....I carry my big mug everywhere and it smells so good, lots of people have asked me what I am drinking....I tell them how easy it is, and so many people's eyes glaze over at the idea of doing more than dunking a tea bag! So I made the videos to convince them that it really is easy, with a visual, a video tutorial.

What a great idea! Maybe you could share a link to the video here too? I know how to cook quite well, but I'm sure plenty of people would find it helpful or be able to share that way :D

Oh, and I just noticed...you don't use any black tea in your recipe or did you forget to add it?

I use the black tea when I make a cup for myself. The recipe I give above is for a chai concentrate that I make in advance and keep in the fridge in quart bottles. That way I can make it once every week or two but drink it anytime I want....usually several times a day!
