Frozen milk or fresh?

Want to make a large amount of cheese for a sale and wondering if I should make the cheese (chevre) ahead of time and freeze it plain, then thaw and cover with herbs. OR...freeze the milk and have cheese making days right before the sale? Which would be better? Has anyone done this before? Thanks for advice.

The local goat dairy farmer told me they freeze the cheese and it is just like fresh.
