I used 1 1/2 gallons of milk and made goat cheese, wow, I have a LOT of cheese from this, I could really use ideas on how to use it.

basic goat cheese, summer cheese, farmers cheese, I see it called so many different names I just call it goat cheese. the kind everyone herbs up, but I am not sure what they do with it then... This is a LOT of cheese! I bet 3-4 pounds. I made Feta a couple weeks ago, it turned out pretty good!

Salads, potatoes, dip, crackers, give some to a friend, make desserts with it, or mix it with salsa and make a dip.

I make chevre, a soft goat cheese, and that freezes just fine. I read that if you freeze chevre that you should put the herbs in it after you thaw it.

I own a creamery and dairy so we usually roll or mix the herbs into the cheese but that works just as well.

We make a lot of chevre and freeze it. We put the herbs on after we thaw as well. Mostly do Garlic and Dill, and Sundried Tomato and Basil.

We've made cheddar before, but mostly do the chevre because it is very good and simple. We are aging our first attempt at feta right now.

Feta is a pretty simple one to start out with since it isn't quite as hard to make and age.

A really good idea for a bit more dessert type cheese is take logs of plain cherve and mix 2 cups of blueberries and a little bit of water boil them over medium heat until a syrup substance forms take it off and dip the logs of cherve in the cooled mix.:drool:p:love:thumbsup
