Ridin' The Range
I enjoy liver from almost any animal. One of my favorite things about deer hunting is the prospect of a heaping plate of fresh deer liver and onions.
Anyway, when I butchered my most recent litter of rabbits, I saved the livers. Kept them in a bowl of cold water, drained and replaced the water a few times. Remove from the water, pat dry. Seasoned liberally with table salt and steak seasoning (don't recall the brand). Grilled on a hot grill until firm and just a hint of pink remained. This only takes a few minutes each side.
Excellent appetizer while waiting for the steaks and chicken to finish!
