I picked up one of my does from the breeder and she gave us 2 pkgs. of goat chops. We have wanted to try goat meat to see if we wanted to raise a meat goat but didn't want to go thru the effort if we didn't like the meat. So, with these chops, I need to know how to cook them. I don't want something really saucy or spicy because we want to taste the meat. A few recipes said not to "over cook" because it will dry out. Do I want to cook goat like beef? low and slow or rare? We're anxious to try these, but I don't know where to begin.

Our favorite venison recipe is for tenderloin medalions seared, then low and slow for a couple of hours with mushrooms and onions? Would that work for goat?

Thanks for your help.

with goat chops I alway toss them in a zip lock with some olive oil, rosemary (if you like the taste), fresh ground pepper, fresh ground salt, worchestershire and a bit of wine (white or red). I leave them in the fridge for the day and grill just a bit more than you would for a medium steak.

Hillsvale, your chops sound wonderful, but I'm going to try them the "venison" way like 20kidsonhill suggested just so we can taste the meat. If it passes, then I'll store your recipe and use it when we get our "whole" goat.

My problem with marinades is I never plan ahead long enough to actually use them. :p I love to cook but just HATE choosing what to cook. I get no help from DH. All he ever says is "hamburgers." :/ The chops are on now and smell great. I'm surprised how little they are. They look like lamb chops.
