share your favorite fall/winter recipes

Since fall and winter are upon us and cooler weather is in the air, I thought I'd start a thread for people to share their favorite cold weather recipes. So bring on the recipes. I'll have to look some up. I love to make homemade soups for the cooler weather. I rarely actually use a recipe though. Lots of times it's just done by looks and guesses.

Recipes can be for meals, desserts, snacks, or whatever.

Marlow I have the same problem. I don't measure anything because I cook for the masses. I made 5 1/2 quarts of Tortellini soup last night, I have a pint left. :idunno

Maybe someone has some good venison recipes they would like to share. Hint hint!

See now I have to look up Tortellini soup to see if I can hunt down a recipe. It sounds good and soups are great this time of year. plus I like to make a big enough pot to freeze some for a later date too.

Can't help with venison recipes. Deer is one of the things DH refuses to eat so it doesn't get cooked here. My dad probably has a ton of deer recipes. I know we used to just fry them up like a country fried steak deal. My dad has also made spaghetti sauce with venison that was really good. That was probably one of the only times my DH has eaten venison since I met him. Fish is another thing I don't cook at home because DH won't eat it. He has a bad shrimp experience once and was turned off to all seafood since. Now you have a taste of how difficult it can be to try new recipes around here sometimes!

What a great idea.
So to celebrate that our orchards are open and it's apple season here in NY -
Slow cooker apple sauce!
8-10 large apples - peeled & cored cut into chunks
1/2 - 1 cup of sugar
1/2 cup of water or apple cider if you want a heavier spicy apple flavor.
1 tsp cinnamon
Combine apples, sugar, water, & cinnamon in a slow cooker, sitr gently. Cook on low for 6-8 hours or until apples are tender. Makes around 5 cups.


Vension can really be substituted in almost anything beef can be used especially if it is ground or cubed, what cuts are you wanting recipes for? I've made Venison Chili with the same recipe that we use for making it with beef.

I use venison just the same as I did with moose (back in Canada) which is the same as with beef. Here we love to make huge batches of strew or soup with tons of veggies and freeze lots of batches. Nothing like having already made meals in the freezer! Stews, soups, and chili are staples here in winter...comfort foods that only need a nice hot of biscuits or homemade bread to go with :)

With venison we do use more garlic...other than that, we use it the same as beef recipes...hmmm...recipes? I've gotten to the point where each meal is a one of a kind...LOL

Lord I miss moose meat! :(

I'm not much of a "recipe" person either. I see something that looks good and then promptly change it, LOL. Leave this out, add some of that, add a lot more of that...

One of my favorite comfort foods is beef and noodles. Grandma always made it for me when I'd come home for a visit. It's especially good on a cold winter night.

Take some bite sized stew meat...how much is dependent on how big a pot you want to make and how much meat you like in it. This stuff does not freeze well, but it will keep several days in the fridge.

I brown it with salt and pepper then cook it in a pressure cooker to soften it up nice. When done, I add minced onions to taste and beef stock to make a sort of thin soup. Once that's good and hot...at a simmer, add noodles. I either buy the frozen homemade ones or make them myself. The thin store bought ones end up (you should pardon the expression) like slimey snot :(

Simmer till the noodles are just done and thicken with a bit of flour and water. We serve it by the ladle full over mashed potatoes, although when the taters run out, I just hot it up like stew and eat it plain. Scrumptious!

Mickey ~ that sounds good. One of our simple staples is to do beef and potatoes. Just get the cubed beef and brown it with whatever spices you want. You can do simple salt and pepper or add some other things to give more flavor. Cut up and cube some potatoes and boil them. When the potatoes are done you drain them, add the cooked beef and serve. Simple but good. I like to add onion and garlic to the beef when I brown it as well.

That sounds pretty yummy too. I like simple things the best...and a one dish sort of meal is even better. I canned my stew beef, potatoes and veggies all separately so we can whip up a simple meal as easy as opening 3 jars and heating it up.

I can give you the tweaked down recipe for Tortellini Soup. It is a light Italian Soup, but very filling. Best served with a nice homemade Italian loaf of bread, but store bought bakery bread will do.

I use to make my own tortellini but it takes WAYYYY too long, so I will recommend frozen or fresh refrigerated tortellini.

I'll pull it together and get back soon.

Marlow your kids would probably love the taco/chicken stuffed pastry. I have a house full of picky eaters and there is never any left. For "big" people its a large ring but I always make the younger kids their own loaves. They love it. Truth be told the teens always want their own little loaves. I can post pics of how to roll them, if anyone is interested.

Does anyone have a spinach ball recipe?

I would love to see a stuffed pastry idea. My kids aren't picky eaters really. I can usually get them to try most things. There are times though that I cook something that may be too spicy for them or a choking hazard (for the youngest one especially). Then we always have something like a frozen pizza, chicken nuggets or sandwiches that I can whip up for them quickly and they are satisfied with that. I've tried my best to make sure the kids at least try new foods. I do not want them to be picky like their dad when it comes to food. When the kids like something you better get your share of it before they do because they will take it all and leave you nothing for yourself if you don't get to it quick enough! :gig
