Cheese Making ~ 1st time didn't go so well ~ ideas?

When I make a quick cheese like that I use both vinegar and lemon juice.

3 qts milk
1/4 c lemon juice
1/4 c vinegar

Add spices...salt/pepper to taste
Oregano/tyme/rosemary/basil....Whatever you like. Dill is really nice too.

It comes out great and I can make it in the am for guests or parties in the eve for fresh cheese and crackers!! Its nice and everyone loves it.

And my chickens love the whey etc..thats leftover!! Its a no waste cheese for me...and I like that part!!

Cheesecake is yummy, if I have a crappy batch of cheese (actually, just like the last one I made....), I also make ice cream out of it. Half cheese/half milk then almost equal amount of sugar (ie 1 cup milk/1 cup cheese/3/4 cup sugar); vanilla and egg yolks and a little salt. Its a pretty good use of stuff that would normally go to the chickens...:)
