How old is too old for using raw milk to make mozz? I make this all the time with left over milk, but is week old milk too old? I usually freeze the cheese.

I think it'll be fine. You figure when you make cheese with store bought milk, it's at least a week old.

The only thing I can think it might do is make the cheese "goaty." As long as the milk isn't bad, it should be fine.

BTW, you freeze the cheese? Does that work well?

As long as the milk isn't 'OFF' the cheese should be fine.

Cheese freezes just fine. I freeze a lot of my cheese.

Okay, thanks.
I like to freeze mozzarella. When I use it in recipes/mainly pizza, I shred it frozen and like that better than when it's soft.

I take a gallon, plus a quart (if)out of the fridge, put in the pot let it sit til it heats 55 degrees.
I dissolve 1 1/2 tsp citric acid in a 1/4 Cup cool water, add to milk
Heat to 88 degrees and then
I put 1/4 tsp liquid rennet in a 1/4 Cup cool water, stir, and add to 88 degree milk.
Take your holey ladle and stir gently continuously until curds form turn off heat 100-105 degrees.
Keep stirring and a big clump of cheese forms. I let it go to 110-120 degrees

Scoop it all out and put it in a microwave safe bowl.

microwave two times at 35 seconds
After each heating I use a paddle spoon and knead it and keep draining it off the whey
After the second heating and kneading it's taffy like smooth and elastic like.

sit it in a cold bowl of water or freeze

Super simple and quick!! Delicious, just like string cheese. Shred for pizza.

Thank you so much. I'm thinking I don't have enough goats, or goats in milk. :D
We go through 3-4 lbs a week, and if I make stromboli, or calzones I use 3-4 lbs just for that!

This looks like an easy to follow recipe too. :fl I can't wait to try it. Right now I don't have enough goats milk, can I use another kind?
Approximately how much does this make?

A gallon of cow's milk makes about a pound of cheese, give or take. YMMV.
