We do deer processing and have for many years. Last year we did a few pigs for us and a few cows for us and our families.

This year we are getting all our ducks in a row to become ODA custom processors :) The health department has already been out, the USDA inspector has been out, we are waiting on a couple of drawing from different engineers and then we can get started.

Last year we upgraded to a much larger band saw, a commerical slicer ( for fresh side or bacon). Our butchering shop we have now will not be quite big enough for what we want to do so we are building a new one. Right now we have been using a 10x12 building and are upgrading to a 32x 24 building.

Our walk in cooler is 8x12 so it should be big enough for what we can handle just being the 2 of us doing it ( in addition to our regular jobs)

I see lots of sanitizer and RFP board and stainless steel in my future :)

Hopefully I can get pics posted as well go.

Our second plan of the year is starting an mini orchard. We have it drawn out and plan to put about 60 trees on this side of the road and another 40-50 across the street :) SOOO much reading and researching to do but I am sure the long hard work will all be worth it when we get up a moving :)

Best of luck! Seems as though demand for local butchering services is going to continue to grow. (did you see on the news that a Chinese company is in the process of buying Smithfield's? Yikes!)
