Back to Nature, I don't think our noodles taste very eggy at all, and I even used our home grown eggs that have a stronger flavor. One way to reduce the egg flavor would be to use store eggs or cage up a couple hens for a few days with just a grain based feed, but not fresh greens or bugs. The yolks lighten up and the flavor isn't as strong. It could also be the olive oil that holds the egg flavor at bay in this recipe. The olive oil is dark so it has a pretty strong flavor.

The ones I made were just flour and egg (for spaghetti). Maybe I'll try the recipe with the oil.

I have always been terrified to try making pastas from scratch. I don't have a pasta roller and some recipes say you need to put it through the roller twice to get it thin enough...I really can't believe how easy these were. and each time they get so much better. I thought that they would be difficult and tedious, but they really aren't that bad. I hope that anyone who has ever wanted to try them does.

I am actually not a big fan of pasta, but I do like the occasional lasagna and ravioli. My family loves any kind of pasta and by making these I can add some variety to the usual spaghetti or mac and cheese.

Ragdoll - those look GOOD! (I love the colored eggs too!) Those look pretty yummi...I might have to ask Bon to pick me up on her way over there! Just be prepared to lose a few cats and ravioli! I'll be the olive oil DOES make a difference in the chewiness and flavor. My mom brought me a tiny tin of olive oil from Greece (her mediterannean cruise) and OMG...the flavor is AMAZING! WOW! Mom said it was some generic brand too! WOW...I could eat it straight up!
My family LOVES all things pasta! We eat noodles too much!
