I was told by a long time highland breeder the AI in this breed is a joke, I trust his advice so I am up for the breed and eat philosophy... the thoughts of sticking a straw in a cow hoohaw isn't that appealing to me!

I love Highlands! I wish we had trees and it wasn't so dang hot here or we would get some.
A local ag school does AI for free for farms in the area so you might check into that if there is an ag school nearby.
Of course I've heard the Highland meet is just the BEST so you're plan is a good one too!

I like your plan. May have to steal it later this fall. We have a small (supposed to be 18 months, but is the same size as our 10 month old steer) highland bull very calm, friendly, etc. So not sold on how old he is (no papers), and everything the guy we bought him from told us so far has turned out to be a lie. Our intention is to use him this fall, and keep him around for quite a few years because of his disposition. If it doesn't look like he performed. When the time comes we may have to steal your plan, I don't have anything for the butcher this fall. I just came across a 5 year old "proven" highlands bull, for $ 500, he is worth waaaay more than that just in burger. Waiting on pictures of him. Don't really want to spend more $$ now though, my wife will have a conniption fit, but where we bought our first cows (reputable farm), he had a 7 year old steer that had become his wifes pet more or less, weighed about a ton on the hoof he figured (probably close too). Using that as a comparison that would put alot of burger in the freezer.

I don't listen to him... buy now and hide, that's my motto... besides it is my money that I am spending... he just needs to feed a few more in the morning, at least he is aware they are there before he goes out to feed them.
