Bella is producing way more than her 1 baby can eat. When will she switch over from producing colostrum to actual milk. I think I'm going to need to start milking her. I am currently just milking out into the bedding and want to start actually keeping the milk for our use since she is producing so much.

Keep it. You can also freeze if for soap making.

No, you will want to follow the withdrawal period. I don't know what the withdrawal period is for milk, but I know the slaughter withdrawal is around 21 days.
