Processing Goat Question

For those who do their own goat processing, do you have to hang and age the meat before cutting and wrapping or do you kill, chill and cut and wrap? I always thought you hung everything to age some, found out today no need to do that with pork, so, do I need to hang my goat? I have one that really needs to be in the freezer, she is just evil.

I've only processed one goat - so I am definitely NOT an expert. We killed and chilled, then wrapped and let it sit in the fridge for a couple days before we put it in the freezer. It was definitely tasty.

When we did our pigs - we killed, and rough cut it and let it hang out in an ice chest (draining the water and replenishing the ice daily) for about 5 days before finishing the processing and freezing.

Again, I am no expert but that's how we did it and it all turned out delicious. :drool

looking forward to trying home raised goat meat, and having one that is evil helps with the attachment issue.
