We found that we take the 4 wheeler ussually out to grab the apples. The rack on it worked perfect to split the apples. Just push the apple on it they split pretty easy.
I couldn't say if it affects flavor of beef, our Highlands grow so slow & apples are only seasonal here. That's good to know about pork though, we are planning on doing pigs this year.
I've been told 55 gallon barrels work great for pigs. Sliced in half lengthwise as feed troughs. Sliced height wise in 3rds for water discard the center from water section (or find another use for it).

I can't comment on the age thing. We do raise Highlands though have for just over a year, ours have been easy to work with, we had three calve last spring of the three only one calf had issue, I don't know where the issue lay he is fine now but we had to tube feed electrolyte & bottle feed him...
