We have Dorpers. They are pretty darned calm for sheep. I had Dall Sheep before. (pretty darned squirrely) I have a couple of Kathadins, but Hubby doesn't care for them too much. The cross really grows well. The Dorpers add a nice rump.
I hear they are taking over Down Under.

My Jerseys didn''t wear halters, only collars. I kept a collar on one, with a Swiss cow bell. That is an easy way to keep track of your animals.
Nowadays, I use the same bells on my sheep. It makes them easy to locate.
I've got a JD850 from the 80's. The only thing I would add to it would be a bucket. That is so handy! Get one with a bucket--It will save you lot's of effort!
