Can you please help me! I have the kit from Hoegger which comes with rennet tablets. Every recipe in her book calls for the liquid. Can anyone tell me how much of the tablet to use in how much water to replace the liquid? I have my milk and buttermilk all ready to make some chevre!

I did but it's been a couple years and I don't remember, sorry...
I called Hoeggers and asked them how to convert it and they told me.

conversion is easy peasy (and i like the tabs MUCH better than the liquid):

1/2 tsp = 1 Tablet
1/4 tsp = 1/2 Tablet

dissolve in 1/4c of cool non chlorinated water (sometime i just use a little bit of water - a couple TBLS).

when you get to the part about "a drop" or "a couple drops" then you can just fudge it. for instance i cut the tablets into quarters and use a quarter.

here is my step by step for fresh cheese, including the tablet stuff:

my reference is "200 Easy Homemade Cheese Recipes" by Debra Amrein-Boyes

good luck!
