These are not too good for fried eggs or other "stand alone" egg dishes, but they are wonderful for baking. In the summer when I have an abundance of eggs I freeze some to use in the winter when my chickens are not laying as well.
To keep the frozen eggs for 'stand alone dishes' (like quiches or scrambled eggs) I add just a drizzle of oil and lightly beat before freezing in what ever measurement I'll need at cooking lime (usually two cups for a quiche). I freeze most of the eggs we'll need for winter over the peak of summer because we provide no artificial light or heat for our chickens over the winter. I also use my favorite refrigerator pickle recipes for pickling eggs in the summer to get my family to eat more eggs while the flock is at its laying peak.

Mmm I've never tried putting tomatoes in it but that sounds good. I have to go make some now lol.

In fact, I should bake some and use up the eggs our 4 hens are laying. We are getting a dozen every 3-4 days.
Oooh! I second this, make some pound cakes! :bun

You could also make a keesh (sp?) those take quite a few eggs to...
