Many add things to the basic receipe, a little sugar, onions, celery, tomatoes, etc. Whatever you like.
To keep the frozen eggs for 'stand alone dishes' (like quiches or scrambled eggs) I add just a drizzle of oil and lightly beat before freezing in what ever measurement I'll need at cooking lime (usually two cups for a quiche). I freeze most of the eggs we'll need for winter over the peak of summer because we provide no artificial light or heat for our chickens over the winter. I also use my favorite refrigerator pickle recipes for pickling eggs in the summer to get my family to eat more eggs while the flock is at its laying peak.sunnygoats said:If you'd like to freeze some you can crack an egg into a small, oiled cup-like container (some people use ice trays). These are not too good for fried eggs or other "stand alone" egg dishes, but they are wonderful for baking. In the summer when I have an abundance of eggs I freeze some to use in the winter when my chickens are not laying as well.

They freeze wonderfully and almost everyone loves them. Bake them in loaf pans and you can bake multiple loaves at once.
In fact, I should bake some and use up the eggs our 4 hens are laying. We are getting a dozen every 3-4 days.
