We processed our two "baby boys" that were born on our farm this year. Sad because they were friendly, but it needed to be done and I am glad they were able to provide us with some meat!

They were both intact male Nubians, about 8 months old. We just picked 'em up all wrapped and sealed up in individual cuts for us... So I am super excited (and a little nervous) to see how they taste. The weren't too stinky and not in rut yet so I am hoping they turn out ok! My boyfriend has never had goat and I've only had it once so I am nervous that they taste good! :p

I don't understand why you didn't wether them when they were about 2=3 months old.

That's what we did before we butchered 3 of them last year.

We just ate the last of the chops, yum yum. The meat was delicious, I did several recipes with it.

I made chili with the ground meat.

I marinated and also brined the roasts before smoking for an hour on the grill with hickory chips then popping in the oven to roast at 225 degrees overnight. Mild and delicious. I like to brine meat, adds flavor and moistness.

Good luck.

We have had ... wether meat and intact.... and a doe.

Needless to say the dogs ended up with most of the intact. :sick
The wether was good!
The doe delicious... I loved the ribs. Everyone in the family liked the goat burgers (ground) I didn't.
I think our slaughterhouse should age them a little more.

How old was the intact ones you ate Southern?

We didn't neuter them right away because I had originally planned on keeping them, and only decided later to eat them... :/

I guess if they are "bucky" I will have to learn to like it or use lots of seasoning to cover it up! They were way to expensive to give to the dogs! :(

We butchered an intact buck, who was determined to rearrange all the fencing he could. We have also had three wethers processed by the butcher.

Can't say the buck meat was bad, but the wethers were better. I think it was mostly because the butcher aged the meat before packing and the buck we did and wasn't aged.

Let us know how you like your goat meat.

Hormones they produce affect the taste of the meat.

Im curious how your goat ended up tasting? Ive never eaten got before. My DH tried it while in Afghanistan and he didn't like it but it was just his army buddies cooking it up they don't know how to cook goat I guess. I might be interested in trying it one day. Can all breeds of goat be eaten or only specific meat type goats?
