I am thinking the odor indicates dying tissue. Gangrene would be a concern. Is the lamb on any kind of antibiotics? With that much exposed flesh I think meds would be critical.
If I was determined to keep this lamb I would consider amputation of the limb.

Odor does mean infection. You need to switch up your tactics. STOP USING SALT RIGHT NOW -- it's drying the skin and the skin MUST REMAIN HYDRATED not moist.

I'm an organic person who's very much a person who stays away from antibiotics, but I'd give a dose. Go out and pick up some pure, local, raw honey. RAW HONEY. That green/grey flesh is necrotic, or dying tissue. You need to stimulate it. Honey is a natural healer and antibacterial, and you'd be surprised what kind of wounds I've healed with it.

Into the raw honey, mix 2 or 3 drops of peppermint essential oil (health food store); peppermint stimulates bloodflow, which is what you need. Slather the honey on and try and keep him from laying on that side. I would suggest shaving the other leg and the belly because there will be honey in the hair, and you need to get past the line where the skin came off. Put on some neoprene gloves and slather the peppermint honey onto the wound so it has a thin covering, from about an inch above where the skin loss starts, all the way down over the feet.

If you think he's worth your effort, put him on a daily antibiotic AS WELL AS a probiotic (mix probiotic yogurt like Astro baltic style into the milk) and Oregano oil. Drench him with 3 or 4 drops mixed into milk twice a day. Oregano oil is a god send.

Watch that grey/green flesh. If it starts to pull away, peel it back very carefully and keep that skin fresh. If the flesh is peeling and there's still necrotic tissue underneathe, then I would suggest putting him down, the infection is likely in the blood at that point.

Edited to ad: You can put honey at 2 tbsp per liter in warm NOT HOT water and mix. Raw honey and water combine to form a chemical reaction that releases hydrogen peroxide. Him consuming honey water will oxygenate the blood and assist healing.

Can you also post pictures of the leg as a whole, I'm worried about the colouration around the bone on that joint.

External on a wound like that would be highly painful, you can get the same results from a soothing substance like Honey and the blood flow stimulation from peppermint oil. Peppermint will also feel to him like it cools and will soothe the area.

Internally, it's a pain killer, antibiotic, antiviral, antifungal and anti-inflammatory. It also has highly bioavailable nutrients.

If you can find it, Burdock root Extract would also be good mixed in with the honey, but I've found it hard to come by. Echinacea extract is easier to find and does the same thing. I would use it topically as I don't know the ratio for ingestion in a case like this. Purchase this stuff from health food stores. You don't need a lot.

Is it possible this lamb was born without the flesh formed on the leg...? I thought of that because of a horror story I heard only recently about a person having a vet pull too hard on a stuck goat kid and the skin breaking free and peeling off (sorry about being graphic).
