I have some goat cheese mozzarela in the freezer from @Devonviolet as well as some frozen spag sauce (with burger, sausage, & shrooms) I made. I should take out both and make a lasagna. Will have to go buy the noodles though. I'll post if I do make it... :hide
 
Per my usual, this recipe freezes well. I usually freeze it raw. I make up to 6 batches at a time as they are something that I like to share and others like to receive. These definitely take a lot longer to cook from frozen but I like to get them out to thaw in the fridge two days before with great results. Leftovers are consumed just as readily as fresh (if there is any left!)

Looks delicious! I love making lasagna and any kind of stuff pasta. I also love to make my own tomato sauce. I'm Asian but I'm convinced that in my past life (if there's such thing), I must be Italian! :lol:
I usually freeze my lasagna as well but they are cooked. It makes for an easy weeknight meal.
 
Well...since @RollingAcres called me out on no new recipes of late and the “Chili Train” was really neat, I thought I’d share another favorite that I know everyone makes differently. This is regularly requested by DS for breakfast too! Lol

Meatloaf

2# hamburger
2 eggs
1 tbsp garlic powder
1/2 tsp black pepper
1 tsp parsley flakes
1 cup ketchup
1 1/2 cups quick oats

Combine. Bake at 350 for 30 min.

Cheats:
1) I bake on a cookie sheet lined with aluminum foil for easy cleanup.
2) I make Meatloaf “Balls” as they cook faster, are more portion-sized, and are perfect for leftovers and freezing. (Some use muffin tins but I like the easy clean up mentioned in 1.) These are just oversized meatballs that are about the size of a racquetball/baseball.
3) I often get out an extra pound or two to make sure I have enough to freeze!

**We dip ours in bbq. I know some coat theirs with some type of sauce for baking.
