Yeah, I prefer the taste of a doe or a young buck. The older ones can get pretty tough and rangy. I don't even know the limits here, we do not have to have a liscense to hunt on our own property, I get meat from some of the farmers when harvest is plentiful. Most of them get deer damage permits too.
Interesting that it is does only in your area. Most be that the F&G has determined that from various studies, etc during the year.

nice! We never seem to be in the doe zone of our state. Only bucks. So my husband passes up the big ones and goes for the younger ones, which works great cause most people are going for the big bucks. I can't stand the super strong buck taste. Even the smell cooking it for the dogs is too much for me. (but yes I do it because I love them)

For those old gamey bucks, here's how I used to do it. I quartered the carcass and dropped in an ice chest. As the ice melted I drained it and added more ice. I used 1/4 cup of salt every other day. After a week or so, I cut the meat off the bone and ground it up. I also ground a whole brisket, fat and all, even added extra fat. I ran both meats through the grinder to mix them up and added sausage seasoning. I stuffed the sausage and smoked it on the pit, low and slow, then wrapped it for the freezer. The combination of soaking in salty ice water, the beef brisket, seasonings and smoking it, turned it into delicious sausage.

Cook it outside, downwind of the house :)

We do a lot of cooking outside on a two burner camp stove that we used the first two years we owned this place. Any odor stays outside and gives the dogs some wonderful day dreams. :)

From time to time, we have deer walking through our backyard....of course during hunting season not so much. Our area varies from year to year as what is allowed, DH hasn't gone hunting for the last couple years.
