Animal choice for naturally raised meats

I have been researching cattle breeds and what would fit in with my particular situation, as I am sure we all have. For my farm and situation I have chosen Lowline Angus. Here are the high points for my operation.
Gentle, can be handled with a minimun of equipment (and a joy to have around the farm and childeren)
Finish well on grass or grain
Easy fleshing
Tender well marbled beef
Small birthweight (just in case you work, and may miss a birth)

Google them on the web, they have many good qualities.

I totally understand about wanting to raise your animals fully pastured. I know quite a few that raise Highland cattle for pasture. I want to raise Tamworth pigs for the same reason, purely pastured. That breed has genetics for being raised that way. I usually go to the Livestock Conservancy website and look up breeds that need our help to be re-established. Lots of breeds and descriptions on there.
