Paneer or "farmer cheese" is the only recipe that consistently works for me. I make lots of it & freeze. With added seasonings, it's good crumbled over salads kinda like feta.


Thanks for that info as I was wondering if it would freeze OK since that block is probably two pounds and there is no way we would eat it before it went bad, especially since I'm not sure how long it stays good.

It becomes very crumbly after freezing. Great mixed in eggs, pasta salad, lasagna, etc but won't slice for frying very well.
Maybe try frying then freezing & see how it thaws & reheats? I bet an air fryer would work better in that scenario than a pan

Yeah, I use my goat cheese like that...salads, in pasta, eggs, roasted with veggies. Ya know, those sheep can be milked! 😂

The farmers cheese is fast, easy and can be soft or solid, depending on how much you drain it, or how long you cook it. I use it like ricotta, or whip it like cream cheese, cook longer and slice.👍 Prob 10 qt ricotta in freezer. Good 8 mos or so.

The spindle for our mower deck came in yesterday but when we got the deck off the mower we saw why the mower has been cutting unevenly. The last time we used it was a bad cut but I blamed it on the spindle but the bracket that holds the PTO cable had gotten broken off so the deck was literally hanging by the cable and one of the frame holding points in that corner. I haven't welded anything since AG shop when I was in high school not to mention I don't have a welder but we have a neighbor that we mutually do things for does so we are back to normal grass cutting.

We got some pork ribs out yesterday to thaw out for smoking today so we got a couple more racks for them and smoked them today.

One of the folks I was stationed with on USS Indpendence back in 1970 posted a picture of our crew on deployment to the North Atlantic. My first name is Charles and that's how I am listed in that cruise book. We got to see a lot of places and didn't even have to pay to go. :) This was the year that the Chief of Naval Operations tried to relax some of the rules and several of us were trying to grow beards but I have too much Cherokee in my heritage so that didn't work well then or now if I tried.

Pressure washing our house siding and concrete block retaining wall has been at the top of our to-do list for the last year but it took us that long to admit that our little pressure washer was not designed for what we wanted to use it for. A friend gave us a recommendation for a guy that does pressure washing as a sideline around his main job. He has been here a couple of hours so far and the siding is looking as good as when we had it installed.
