6 qts of crushed tomatoes in the canner. Freezing the tomatoes made a huge difference in getting the skins off! Though a frozen tomato could definitely hurt when dropped on a toe (no I didn't but was very careful given my current track record) and I was impatient on the thaw - after hours they were still pretty hard - couldn't wait so I did the "peel" -- thinking I wonder if anyone has been to urgent care with frostbite in August, in So Cal!!
Now wouldn't that be a great story for the folks at urgent care?!!! And no I didn't
.
Jars are in the canner and the peels are dehydrating in the oven, life is good.
The heavily producing tomato plants are definitely on the end of their production - only 3 lbs today.
Dinner tonight -- BLTs and soup. I used one of the Opo squashes and made a batch of soup. Ohhhhh the taste test was "why have I never had this before?!" so good. The squash is a first for me. You can treat it as a summer squash or let it go and treat it as a winter squash. Let me tell you - I tasted it raw and OMG -- it's very much like a cucumber in taste with a nice crisp crunch. In the soup it's not like cucumber at all. This one is definitely going to be a grow it again one.
